Brush one filo sheet generously with melted butter and lay the other sheet on top. Heat oil in heavy medium saucepan over medium heat. Uncover the pan and scatter over the mint. Season with freshly ground black pepper to taste. Meanwhile, cook the peas in a pan of boiling salted water for a few minutes, until tender.
