- Heat the oil in a pan. Add in the shallots and garlics. Fry until fragrant.
- Then add in the turmeric, gallangal and ginger. Fry until fragrant.
- Add in the lime leaves, lemongrass and bay leaves. Fry again until they release aroma.
- Then add in the fish as well as the water.
- Add the seasonings. Taste test.
- Simmer for 5 minutes.
- Add in the tomatoes, basil leaves and green onion. Cook for 15 more minutes. Do not over mix because the fish might go mushy.
- Turn off the heat. Serve.
