The ingredients needed to make Chilli Buttermilk:
  1. Prepare 200 gm curd (natural yoghurt)
  2. Get to taste Salt
  3. Take 1 tbsp oil
  4. Make ready 1/2 tsp mustard seeds
  5. Make ready 2 chopped green chillies
  6. Get 1 inch Ginger chopped
  7. Get Pinch Asafoetida (optional)
  8. Take 300 ml water
  9. Take Chopped curry leaves and coriander leaves (optional)

We always make this in summer and use it in rainy winter season. Goes well with curd rice, sambar etc. Pour the buttermilk over the chicken and allow the chicken to soak in the mixture for at least an hour in the fridge. Coat the chicken in buttermilk cover and pop in the fridge overnight.

Steps to make Chilli Buttermilk:
  1. To make buttermilk, Mix curd and water and beat well until no lumps seen. In a small pan, heat oil, add mustard seeds and let it splutter. Add chopped green chillies and ginger, curry leaves, then asafoetida. Remove from heat and add it to the buttermilk mixture. Check seasoning, add chopped coriander and serve cold.
  2. Best refreshing drink on a sunny day and goes well as a finishing drink after an Indian dinner. If you prefer, You can strain before you serve.

Pour the buttermilk over the chicken and allow the chicken to soak in the mixture for at least an hour in the fridge. Coat the chicken in buttermilk cover and pop in the fridge overnight. Mix the flour with all the spices. Drain chicken from the buttermilk and coat in seasoned flour. Mix the buttermilk, chipotle chilli paste, a generous pinch of salt and pepper in a bowl.
