- Wash and rinse all vegetables well.
- Finely chop it to medium sized and keep aside.
- Take a kadhai or a pan add oil, heat well, then add cumin seeds as it splutters, add asafoetida, then add chopped chilli and ginger. Saute and stir for few seconds.
- Then add chopped carrots and beans. Saute it for 2 to 3 minutes on medium to high heat.
- Now add turmeric powder, red,chilli powder, coriander powder, garam masala powder,sugarAnd stir and mix nicely.
- Take 2 or as needed tablespoon water and add in sabzi.Cover it with a lid and let it cook on low heat till it's cooked well. In between check and stir.
- Once it's cooked well,add kasuri methi and amchur powder and mix well.
- Cover it and let it cook for 3 to 4 minutes on low heat.
- Switch off the heat. Let it be covered for 5 to 10 minutes more.
- It's ready to be served with chapati, paratha or with dal rice etc.
