Add the cinnamon stick, cardamom pods and cloves and fry for a few minutes. Make the rogan josh: In a medium bowl, season the beef with the garam masala and salt. In a large, heavy-bottomed pot, heat the canola oil over medium-high heat. Remove from the pot and set aside.
