The ingredients needed to make Fried Yam and Liver Sauce:
  1. Take Fried yam
  2. Take Livers of 5 chickens
  3. Get 2 medium fresh tomatoes
  4. Make ready 1 big Onion
  5. Prepare 3 attarugu
  6. Get 2 red bell pepper
  7. Take Spices
  8. Make ready 2 tablespoons Olive oil
  9. Get 3 seasoning cubes

Wash the yam chips and place in a bowl. Add a little salt and toss the contents to distribute the salt. Place a large knob of butter in the pan. Heat the butter in a large frying pan.

Instructions to make Fried Yam and Liver Sauce:
  1. Wash and chop Tomatoes, peppers and Onion. Set aside.
  2. Wash livers, add 2 cups water and pre boil with a pinch of salt and part of Onion for 5mins. Bring out livers and dice into small pieces.
  3. Return livers to pot, add in all other ingredients and allow to cook till stock dries up(not totally) and begins to fry.
  4. Put off heat and serve with fried yam.

Place a large knob of butter in the pan. Heat the butter in a large frying pan. Add the onion, bacon lardons, garlic and thyme. Season the flour with salt and black pepper and coat the liver. Transfer the meat and onions to a plate, and return the pan to low heat.
