To cook the focaccia, as soon as the dough has risen, pound it, then place on a baking tray and spread it out to cover the tray.   4. Take out the risen dough from the bowl and knead for a while. Spread a mold about 20 x 30 cm in oil, put in the dough and knead it with your fingers spreading over the entire surface of the baking tray. Let stand for 1/2 hour.
  5. Cut the courgette and cheese into slices, and cherry tomatoes in halves. Arrange slices of cheese on the dough, cover with slices of zucchini and cherry tomatoes halves, season with salt and herbs and drizzle with oil. Let stand for 15 minutes. In the meantime, preheat the oven to 220C/430F. Bake for 15 minutes.
