- Get 1 courgette

Steps to make Halloumi Traybake:
- Preheat the oven to 190C/375F. Quarter the courgette lengthwise, then slice. Place in a big bowl. Peel the onion, cut it in slices or wedges and add to the bowl. Add a tbsp of olive oil, pressed garlic and some spices. Toss to coat the veggies.
- Line a large baking sheet with parchment paper. Spread the veggies in an even layer. Put in the oven with the rack in the upper third.
- Cut the halloumi into slices and then the slices in half lengthwise to obtain strips. Place on the baking sheet on top of the vegetables. Bake for 13 minutes.
- Add cherry tomatoes on top and bake for 10-15 minutes until the halloumi turns golden brown and the cherry tomatoes start to open.
- Serve hot. Take a piece of bread, spread some hummus on it and top with the traybake mix.
