Steps to make Halloumi Traybake:
  1. Preheat the oven to 190C/375F. Quarter the courgette lengthwise, then slice. Place in a big bowl. Peel the onion, cut it in slices or wedges and add to the bowl. Add a tbsp of olive oil, pressed garlic and some spices. Toss to coat the veggies.
  2. Line a large baking sheet with parchment paper. Spread the veggies in an even layer. Put in the oven with the rack in the upper third.
  3. Cut the halloumi into slices and then the slices in half lengthwise to obtain strips. Place on the baking sheet on top of the vegetables. Bake for 13 minutes.
  4. Add cherry tomatoes on top and bake for 10-15 minutes until the halloumi turns golden brown and the cherry tomatoes start to open.
  5. Serve hot. Take a piece of bread, spread some hummus on it and top with the traybake mix.
