  3. Prepare 2 tblsp massaman curry paste
  4. Make ready 1 cup pineapple juice
  5. Get 1 1/2 cup fish stock/ prawn heads
  6. Make ready 2 cups green beans halved
  7. Take 1 red pepper chunky chopped
  8. Get 200 g baby corn halved lengthwise

  1. On medium heat fry onion and chilli. Once soft add curry paste and fry till fragrant. Add pineapple juice and water and prawn heads (or stock) bring to boil and simmer for 8-10 minutes.
  2. Add red pepper, green beans, baby corn and stir. Remove prawn heads. Add pineapple and simmer for 5 minutes. Add prawns and cover. Cook for 90 seconds.
  3. Add coriander, and remove from heat and stir. Season with salt and pepper and serve hot 🤩
