The Nigerian White Rice and Stew is a popular Nigerian rice recipe because it lets you eat rice with any stew or sauce of your choice. This rice recipe is usually eaten with Beef and/or Chicken Stew which we almost always have in the freezer so it is just a matter of boiling white rice. So if you already have Beef/Chicken Stew in your freezer, the Boiled White Rice and Stew will be one easy. Rice and stew is easy to prepare.

The ingredients needed to make Rice and stew:
  1. Make ready Rice
  2. Get Tomatoes,pepper,onions (manually blended)
  3. Make ready Vegetable oil
  4. Take Plantain
  5. Make ready Goatmeat
  6. Make ready Catfish
  7. Make ready cubes Salt, seasoning
  8. Get Thyme, bayleaf, curry, ginger powder

The rice stew wasn't bad at all. I thought that it tasted better the second day. I would suggest adding the spinach only after simmering. It loses colour when it has been simmered for too long.

Steps to make Rice and stew:
  1. Parboil rice, wash after a few minutes and boil again till dry and keep hot.
  2. Wash meat and cat fish clean and add onions, pepper, bayleaves, ginger powder, salt and seasoning cubes and boil, after about 5minutes, carefully remove fish and grill whilst the meat cooks till properly done and grill afterwards too, sieve stock and set aside.
  3. Put vegetable oil in a pot, when hot add thyme, onions and stir then the blended paste and allow to fry, stir at intervals so it doesn't burn till its fried well then add meat and stock, salt, cubes and allow to cook, stir still so it doesn't burn when it's properly cooked the oil will come and settle at the top of the pot, add curry powder and take off heat after abt 2minutes.
  4. Wash and peel plantain and cut into desired sizes then Put vegetable oil in a pan on medium heat then fry plantain till golden brown then turn off heat.
  5. Serve and enjoy!

I would suggest adding the spinach only after simmering. It loses colour when it has been simmered for too long.
