In a large bowl, stir together the flours and salt. Use a wooden spoon to stir in the olive oil and enough water to make a soft dough that is elastic but not sticky. After that make medium sized balls of this dough. Take a ball and make a thin chapati using rolling pin and rolling board.

The ingredients needed to make Crispy Chapati:
  1. Get 1 cup whole wheat flour (aata)
  2. Take To taste Salt (optional)
  3. Get Water as required

Serve adding sev and coriander leaves from above. Place the chapati on the hot griddle. Gently press on top of the chapati to make the chapati fluff up. Heat a skillet over medium heat until hot, and grease lightly.

Instructions to make Crispy Chapati:
  1. Knead a soft dough and keep aside for about 10-15 minutes. After that make medium sized balls of this dough.
  2. Take a ball and make a thin chapati using rolling pin and rolling board. Place this chapati on heated tawa and cook both sides.
  3. After cook on tawa place this chapati on direct flame and cook until you get nice colour and crisp.
  4. Serve roti with a dollop of ghee or butter or you can make a ball of this chapati and serve hot with ghee.

Gently press on top of the chapati to make the chapati fluff up. Heat a skillet over medium heat until hot, and grease lightly. On a lightly floured surface, use a floured rolling pin to roll out the balls of dough until very thin like a tortilla. When the pan starts smoking, put a chapati on it. By precooking a thick chapati and then baking it at a high temperature, with toppings, the chapati turns into a nice crispy pizza crust.
