- Make ready 1 tablespoon Soy Sauce
- Take 1 teaspoon Oyster Sauce
- Take 1 teaspoon Sesame Oil
Cooking Instructions: In a hot wok/pan, heat some olive oil and sauté. If its fresh, add a few tbsp of water, cover with a lid, season with salt and pepper and let it cook on low heat Next add the soy sauce and sugar followed by the rice sticks Continue to stir fry for a few minutes until the veggies and noodles are soft and well cooked Finally add the bean sprouts and the cooked scrambbled eggs Add some oil to the wok, turn heat high then add vermicelli noodles, stir till heat goes through. Cook the rice vermicelli in boiling water according to packet instructions or until soft. The vermicelli is presoaked in water, drained and set aside.
Instructions to make Sir-fried Rice Vermicelli:
- Cut all vegetables into thin strips. Cabbage leaves can be cut into 1-2cm wide strips. Cut thinly sliced Pork into the size that is easy to eat.
- Combine all the sauce ingredients in a small bow. *Note: You might need to add Salt depending on the saltiness of the Chicken Stock you use.
- Cook Dry Rice Vermicelli in boiling Water firmly, for slightly shorter time than instructed, then drain. *Note: The noodles will be cooked with other ingredients later.
- Heat Oil in a large frying pan or wok over medium to high heat, cook Pork, add vegetables, and season with Salt & Pepper.
- When ingredients are cooked and seasoned, add firmly cooked Rice Vermicelli, pour over the sauce, and stir-fry until the liquid is gone.
Cook the rice vermicelli in boiling water according to packet instructions or until soft. The vermicelli is presoaked in water, drained and set aside. The hawker will saute some chopped garlic and onion with vegetable oil or lard, then stir-fried with a few shrimps, squid, and meat. Some hawkers also add an egg.
