Instructions to make Rajma (Kidney beans) Butter Masala:
- Soak rajma (kidney beans) in water overnight. Drain the water.
- Pressure cook with about 3-4 cups water for 3 whistles on medium and 1 whistle on sim. Rajma should be cooked such that it should have retained it's shape when pressed between fingers.
- Meanwhile crush ginger, garlic and green chillies in a mortar and pestle. Finely chop onions. Puree tomatoes.
- Heat oil+butter in a pan on medium heat. Add cumin seeds and let seeds splutter.
- Add finely chopped onions, ginger, garlic and green chilli paste. Saute till slightly brown.
- Add tomato paste and saute well for about 4-5 mins.
- Once the raw smell of the tomato, onion paste goes they start leaving oil, add all the masalas, i.e, turmeric powder, red chilli powder, salt, coriander powder, cumin powder, garam masala. Saute for 1-2 mins.
- Add boiled rajma along with water. Mix well and let it simmer for 5 mins.
- Rajma butter masala is ready. Garnish it with coriander leaves.
- Serve it with chappati or steamed rice or jeera rice.
