Put the noodles in a heatproof bowl and pour over boiled water from the kettle. Cook the noodles following the pack instructions, rinse and drain. Prepare the dried egg noodles according to the instructions on the packet. (I use the leftover vegetable water to cook the egg noodles – its already hot, and full of vitamins!). Stir in the sauce and the basil or cilantro (aka coriander) (optional).

  1. Prepare 1-2 tbsp Thai curry paste (depending on size of fish fillets) (see recipe)

  3. Get 2 tbsp coconut cream (shaved)

While the salmon is cooking, boil the ramen noodles according to the package instructions. When complete, rinse briefly with cool water to stop the cooking process. To make the vinaigrette, whisk lime juice, peanut oil, fish sauce, soy sauce, honey, sesame oil, chili paste, lime zest, garlic, and ginger in a bowl. I chose to pair the glazed salmon with a Thai noodle salad made with dry rice noodles.

Steps to make Thai salmon with noodles:
  1. Preheat the oven to 180 degrees.
  2. Heat a pan over a high heat. Add the the Thai paste. Fry for 2 minutes to let the flavours infuse. Then add the shaved coconut cream. Mix until it has melted, add a dash of water (it should be a thick paste) and remove from the heat.
  3. Line a baking tray with foil and lay the salmon out, skin side down. Spread the paste over the salmon and bake for 10 minutes. (I like mine soft/ medium rare in the middle. If you like it more well done, cook if for a couple more minutes).
  4. While the salmon is cooking, stir fry some veg (I had even more Thai paste which I threw in with the veg) and cook some noodles.
  5. Remove the salmon from the oven and serve :-)

To make the vinaigrette, whisk lime juice, peanut oil, fish sauce, soy sauce, honey, sesame oil, chili paste, lime zest, garlic, and ginger in a bowl. I chose to pair the glazed salmon with a Thai noodle salad made with dry rice noodles. The salad is flavored with all my favorite trifectas of Thai cooking: fish sauce (a must!), freshly squeezed lime juice, cilantro, basil (Thai is best), mint leaves, scallions, and chopped peanuts. Salmon is one of my favorite fish to cook and it pairs nicely with my Thai Peanut Sauce. I mix the sauce ingredients ahead of time in a measuring cup, and then pour it right into the skillet.
