Gujiya (Hindi: गुजिया) or a karanji (Marathi: करंजी) is a sweet deep-fried dumpling, native to the Indian subcontinent, made with suji (semolina) or maida (all purpose flour) stuffed with a mixture of sweetened khoa (milk solids; also called mawa) and dried fruits, and fried in ghee. Gujia is a fried pastry filled with an aromatic nuts mixture. In India, Gujia is traditionally made for the holidays like Diwali and Holi and is a must have treat. The ingredients needed to make Gujia:
  1. Prepare 250 gm Maida
  2. Get 100 gm Khoya
  3. Get 750 gm Sugar powder
  4. Get 60 gm Ghee
  5. Get 400 gm Sugar
  6. Take 1/4 cup Dry coconut grated
  7. Get Dry fruits 2 tbsp each
  8. Get 1/4 tbsp Cardomom powder
  9. Get Ghee for frying

Instructions to make Gujia:
  1. Crumble khoya & roast 2-3 min off the flame. - Add powder sugar& cardamom powder,dry coconut grated,dry fruits and mix well. - Take maida in mixing bowl. Add ghee. - Add water little by little to form a smooth nonsticy dough.set aside to rest. - Take sugar in a pan, add water to it.heat it up.
  2. Boil until it reduces and sticky syrap.no need to check for string consultancy.set aside. - Now knead the dough well. Roll to a thin sheet,cut with lid. - Take 2 circles add 2 tsp stuffing in the centre. - Cover with another circle. Press at the edges to seel completely. - Pinch fold continuously to get pattern like this.
  3. Heat oil in a kadhai,add 2-3 at a time.fry until golden brown.cook in a low medium flame. - small Drain and then add it to warm sugar syrap.turn over and let it soak 5 minutes. - Then remove it from syrap and arrange to plate.
