Bolognese or beef ragu are rich, comforting sauces with an outstanding depth of flavour when cooked over a long period of time. Because of the slow cooked meat and depth of flavour a ragu can achieve, this sauce can handle wines with more power and tannin. 4. Simmer once up to boil and add salt, pepper, bay leaves and sugar. Add the mushrooms and leave to simmer for an hour or stick into a slow cooker for as long as you like.
  5. Leave overnight for more intense flavour. I also like to top fluid level up with extra red wine but you can use water.
