In Indian cuisine Spinach & Cottage cheese/paneer combination is usually found as a silky green colored semi gravy ,enriched with thick spinach puree, but I have made the combo quite interesting by skipping pureeing of spinach instead have kept the gravy chunky and full of flavours of crushed black pepper corns and little corn starch was used at the end in order to thicken the gravy a bit. Blend the mixture in a blender to make an even thick spinach paste.
