The ingredients needed to make Curry Chicken:
  1. Make ready 1 chicken thigh
  2. Get 1 onion
  3. Get 1 potato
  4. Make ready 1 carrot
  5. Take 60 g currycubes
  6. Take 15 g curry powder
  7. Take 15 g coriander

In a large pot over medium-high heat, heat oil. There are a hundred different ways to cook chicken curry, but Bengalis (from the eastern part of India) make something called Kosha (or kawshaa) which is very good with either rice or any kind of flat bread. This recipe is called moorgi kosha (or chicken kosha), but my friend Jennie calls it Chicken Chicken Curry! The curry can be made without adding the yoghurt up to a day ahead.

Instructions to make Curry Chicken:
  1. Cut chicken thigh into 4cm cubes, onion into 1 inch pieces, carrot and potato into 1 inch cubes.
  2. Blanch carrot and potato for 5min.
  3. Heat 2tbsp cooking oil, saute onion for 1min. then add chicken cubes, stir-fry for 2min.
  4. Add 1tbsp curry powder, stir-fry for 1min.
  5. Pour 500ml water in the pot, then put carrot and potato in.
  6. Until the water boil, cover with the lid, cook on medium heat for 15min.
  7. Add curry cubes, stirring till curry cubes are melted. cover and cook on low heat for 10min.
  8. Add coriander before serving.

This recipe is called moorgi kosha (or chicken kosha), but my friend Jennie calls it Chicken Chicken Curry! The curry can be made without adding the yoghurt up to a day ahead. Reheat gently to serve and stir in the yoghurt. The curry also freezes well without the yoghurt. Simply reheat as above when needed.
