Steps to make Cheese Fatayer:
- In 1/2 cup of warm milk add sugar and yeast and keep for 8-10 minutes to activate.
- In a big mixing bowl pour the flour. Add salt and butter and mix.
- Make a hole in the centre of the flour and pour the broomed yeast.
- Mix slowly with a spatula to incorporate.
- Now slowly add warm water to make a soft dough.
- Rub some oil to the dough and cover it.
- Keep aside in a warm place for about 2 hour or till dough becomes double in size.
- Meanwhile prepare the filling by combining chopped parsley, mint and oregano/thyme with feta cheese.
- After 2 hours or when the dough becomes double in size take out in a work place or kitchen platform and knead well by stretching and folding method.Knead for atleast 10 minutes.
- Divide the dough in half. Take the first half and roll into a rectangle.
- Spread half of the filling in the rectangle then roll to form a log.
- Cut the log into 1.5 to 2 inches pieces, or less according to your desire. Then brush with milk.
- Using a wooden stick, or back side of your laddle, make an indentation in the middle of each piece. This is necessary to give the shape I like. You can make other shape also.
- Place all the fatayer in a baking tray and rest again for about 20 minutes.
- After 20 minutes bake them for about 20 minutes (until light golden brown)in a 200 degree C preheated oven.
- Let them cool down and enjoy!!
