Coat each ball really good and fry them in the oil. They will be a crispy light brown when they are done. Set on a paper towel to drain the oil. Heat oil in a deep fryer or large saucepan to hot.

  1. Add butter to a pan and melt through. Add flour gradually and mix into paste. Cook for a couple of mins and then start to gradually add the milk. Mixing as you go. Finally add cheese until fully mixed in.
  2. Boil a kettle. Add to pan with macaroni. Cook for 7-9mins until el dente. Leave to cool. Once cool, add the sauce and pasta together. Store for 2hrs to cool.
  3. With wet hands, sculpt into balls. Add the flour, eggs and breadcrumbs to three different dishes. Roll in flour first, then eggs and finally coat in breadcrumbs.
  4. Heat deep fat fryer (or oil in a pan) to 150c. In batches of 2-3 gently drop into oil (watch for splash backs) and cook until golden brown. Place in a piece of kitchen roll to remove excess oil. Store in warm oven until all fried.

Set on a paper towel to drain the oil. Heat oil in a deep fryer or large saucepan to hot. Whisk the bread crumbs with the paprika, chilli powder, black pepper, sugar and cayenne in a shallow dish; set aside.
