In case you are wondering, Christmas mincemeat is not, as the name suggests, made from meat, although it once was. It does contain suet, however, a saturated animal fat that's used in British baking, but there are vegetarian suet options; you can also use vegetable shortening (freeze it first). The suet melts in the oven and helps to preserve the mincemeat, and gives it lots of flavor. Mincemeat was originally made with chopped meat mixed with sugar and spices, hence the name.

The ingredients needed to make Christmas Mincemeat:
- Prepare 8 Ounces apples bramley , coarsely grated
- Take 4 Ounces suet , shredded
- Get 6 Ounces raisins
- Get 4 Ounces sultanas

- Take 4 Ounces citrus candied peel , chopped
- Take 6 Ounces dark brown sugar soft
- Prepare 1 orange , grated zest and juice

- Prepare 2 Teaspoons allspice , ground
- Take 1/4 Teaspoon cinnamon , ground
- Get 1/4 Teaspoon nutmeg , ground
- Take 3 Tablespoons brandy
When the mincemeat is quite cold, stir well again, adding the brandy. Pack in jars that have been sterilised (see below). When filled, cover with waxed discs and seal. Vegetarians can make this mincemeat happily, using vegetarian suet.
Instructions to make Christmas Mincemeat:
- Combine all the ingredients except the brandy in a large glass bowl. (note: i didnt have suet so i used crisco instead, and the results were pretty good!)
- Mix well and cover with a cloth (cheesecloth, teatowels, anything is fine). leave it overnight so the flavours have a chance to meld together well.
- Preheat the oven to 120 degrees C.
- Remove the cloth covering and cover the bowl loosely with foil.
- Place in the oven for a good 3 hours (at least).
- Remove from the oven. the mixture will look like its positively drowning in fat, and thats exactly what we're after.
- Let the mixture cool to room temperature. as it is cooling, stir it every 15 minutes or so. what this does is it distributes the fats evenly so that it coats all the ingredients as it cools.
- When the mixture has cooled to room temperature, add the brandy and stir well to combine.
- Store in sterilised glass jars. it can be kept for months in a clean, well sterilised jar in a cool, dark place (no need to refrigerate).
- Its perfect for gifting too! put it in small artisan jars with metal lids, and tie a festive ribbon around the rim of the bottle.
When filled, cover with waxed discs and seal. Vegetarians can make this mincemeat happily, using vegetarian suet. My aim for Christmas, is always to have tasty and enjoyable food without huge or unnecessary expense- and without being a slave to the kitchen. Firmly pat half the crumb mixture into prepared pan, then cover evenly with mincemeat. Sprinkle remaining crumb mixture over mincemeat and pat lightly.
