- In a mixing bowl pour coconut or almond milk.
- Into that add egg, olive or coconut oil, vanilla essence, honey(optional), cinnamon powder.
- Mix well with a hand mixer.
- Add oats and grated carrot.
- Mix well to combine and then add raisins.
- Toast flax seeds in a pan until they crackle.
- Add these toasted seeds to the oat mixture.
- Mix again with a spatula.
- Pre heat oven at 180 degree Centigrade for 10 minutes.
- Line a muffin tray with greased muffin liners.
- Fill 2/3rd of each mould with the mixture.
- Sprinkle some more raisins and flax seeds.
- Bake them for about 20 minutes or until a toothpick inserted comes out clean.
- When baked completely take out from the oven.
- Keep aside for sometime to cool.
- Take out from muffin tray and enjoy as snack or even as breakfast.
