Meethe Chawal or Zarda Rice is a sweet and rich rice preparation loaded with dry fruits, sugar and ghee. This aromatic sweet saffron flavored rice is royal dessert made on special occasions and festivals. Steps to make Zarda Chawal:
- Boil the rice with the colour till 3/4th and drain the water. Keep aside.
- Heat ghee.
- Add cloves and cardamoms.
- Now add the rice and add the sugar, give it a quick stir with gentle hands. Keep the flame high and cover the pan. The sugar will leave water. Keep checking in between to avoid burning.
- Once the it starts drying up add all the dry fruits(I did not have coconut and pistachio) and mawa; again stir gently. Keep the flame at medium.
- After 5 minutes add the kewra water and meetha attar and turn off the flame and cover it and keep it on standby for 5-10 minutes.
- You may add more dry fruits before serving.
