- Boil dried chilies in boiling water for 10 mins and blend them into paste, set aside.
- In a pot, boil the potatoes until soft. Set aside.
- Prepare the noodles as the package instructions.
- In another pan, add the eggs and scramble them and cook until 70% done. Set aside.
- Heat a frying wok over high heat. Add the oil and garlic until fragrant.
- Add the chicken and squid and cook for 4 mins.
- Now add chili paste and fry for a min.
- Add the noodles, both soya sauce, ketchup, vinegar, sweet potato puree and fry for 4 mins.
- Add egg, bean sprouts, spinach, potatoes and mix well.
- Serve with wedge of lime.
