A wonderfully elegant and easy pork tenderloin dish with a creamy herbed wine sauce.
Steps to make Roasted Pork Tenderloin with a Herb Sauce:
- In a small bowl mix well all the marinade ingredients together expect the Tenderloin. Add a little more olive oil if it's slightly dry as it needs to be similar to paste.
- Place the Tenderloin in a freezer or zip lock bag and add the marinade. Rub the marinade well into the meat. Transfer to fridge until needed, allow to marinade for atleast one hour.
- Mix all the ingredients for the herb sauce together well. Cover with clingfilm and set aside until needed. Give the sauce a mix just before using.
- Tenderloin can be roasted at 200c for about 20-25 minutes depending on its size in the oven, placed in an oven proof tray with all the marinade aswell. However I chose to pan grill it because I think it gives it a better flavour.
- If you choose to pan grill it I would advise to flatten the meat so it cooks evenly throughout. A rolling pin can be used if a meat hammer is not available. Wrap the meat inside another bag in case the bag breaks then wrap the bag in a tea towel to prevent the bag from splitting.
- Spray the grill pan with frylite or olive oil, allow to come to medium to high temperature and then grill the meat for 5-8 minutes per side or until its fully cooked through.
- Allow to rest for 5 minutes and serve
The blend I used in this recipe is a classic mix of basil. A wonderfully elegant and easy pork tenderloin dish with a creamy herbed wine sauce. Very rich, without all of the fat and calories! I used fresh basil and parsley, carrots, spinach and mushrooms. Served it with roasted garlic smashed potatoes as suggested, but this is great with pasta too.
