  2. Place butternut squash, red pepper and red onion on roasting tray. Toss it with olive oil. Stick it to the oven preheated to 180 °C. Roast for 15 min.
  3. Cook your sausages and cool them down. I bbqed mine but these can be seared and then finished in oven. Slice them up
  4. Start searing chorizo and after 2 - 3 min add courgettes. I dried out excess fat with kitchen roll.
  5. When courgettes nicely seared add pork sausages. Add tomato soup (passata/stock) Add beans and fenugreek and cook it for another 10 min (max)
  6. Add roasted veg. And cook it for another few min. Adjust seasoning and finish with flat leaf parsely.
  7. Serve. There is a good ratio veg/meat so no need for side veg. I had mine with sweet potato mash but can be served with crusty bread, mash or rice.
