It will give you very refreshing and cool feelings. finally, pour masala chaas or spiced buttermilk into glass or matka and serve chilled. notes: firstly, adjust the amount green chilli if you do not like spiciness. also if using sour curd skip the addition of lemon juice. additionally, adding tempering is optional, however adds more flavour to chaas. Chaas is a common term for buttermilk and masala chaas is nothing but a spicy buttermilk made using fresh herbs, green chillies and mainly added is black salt. To make it spicy any kind of spices can be added such as cumin powder, chaat masala powder or any other powder like kala namak or. masala chaas also called spiced buttermilk is a perfect way to beat the heat during the hot Indian summer. This is a variation to the basic chaas recipe and easy and quick to make.

Steps to make Masala Chaas | Spiced Buttermilk:
  1. Take a blender. Add chopped mint leaves(1/4 cup), chopped coriander leaves(5 grams) & green chilli to the blender.
  2. Grind it for 6 to 8 seconds.
  3. Then add curd, water(1 cup), roasted cumin powder(2 tsp), black pepper powder(1 tsp), salt & black salt into it.
  4. Grind them for 30 seconds. After blend add water. Pour the blended curd in a big pot.
  5. Take a Churner and churn it for few seconds. After Churn pour it into glasses.
  6. Sprinkle roasted cumin powder & black pepper powder on the top of the drink(buttermilk).
  7. Garnish with mint and coriander leaves. Then ready to serve.

My twist is to add green chillies, coriander, ginger and Curry leaves!!…. This is my South Indian touch to accentuate the flavour of the Punjabi Chaas and trust me it tastes awesome!!
