- Take For Dough:
- Make ready 2 cups all-purpose flour
- Make ready 1 tsp Carom Seeds
- Make ready 4 tsp ghee
- Take 1 Cup cold water

- Make ready 1 tsp Jeera /cumin seeds
- Get 1 tsp Whole Coriander
- Get 1 tsp fennel seeds

- Get 2 Green Chillies,Chopped
- Take 1 tsp turmeric powder
- Make ready 1/2 tsp Asafoetida
- Take 4 medium sized boiled potatoes
- Make ready 1/2 Green Peas
- Make ready 1/2 tbsp prepared masala
- Prepare 1/2 tsp black pepper Powder
- Take 1 tsp Dry Amchur powder
- Take 1 tsp fresh coriander
- Take to taste Salt
Instructions to make Punjabi Samosa:
- Take all-purpose flour add salt and ghee to it and mix all together now add cold water to it make a hard dough and keep for 20 min rest.
- Now take a grinder add roast jeera, whole coriander and fenel seed, grind them to make powder.
- Take a pan pour a ghee to it now add Asafoetida powder, Chopped ginger, green chillies saute for 5 min
- Now add peas and roasted masala mix it well add turmeric powder, black pepper powder and dry amchur masala and stir for 5 min.
- Than add peeled roughly mashed potatoes and salt and mix and saute till 10 min than garnish with coriander.
- After 5 min turn off the flame pour the filling in a large plate so that it cool down quickly.
- Take a dough knead it make a roll and cut the dough in half inch size now sprinkle some flour on the clean surface and make a medium size roti and cut in two parts.
- Now make a corn of one part and stuff the potatoes filling to it and sealed it with pasting water on the edge side same way repeat the same procedure and make others samosa.
- Refrigerate the Samosa for 10 min.
- After 10 min take a deep frying pan pour oil and heat it on high flame as soon as oil become hot slow down the gas flame and put samosa one by one for frying.
- Fry the samosa in low flame till it become golden brown than take it out and serve it with coriander chutney and ketch up.
