Instructions to make Almond Ghughra (gujia):
- Firstly take 1 cup of almonds. In a blender make powder.
- In a pan add ghee and roast almond powder on medium flame until it slightly golden and smells really good. Turn off the flame and keep aside.
- Let it completely cool then add powdered sugar, cardamom powder and nutmeg powder mix well and keep aside.
- Now prepare dough for ghughra. In a bowl add maida and ghee mix it well then add water as needed and make a tight dough. Cover and set aside for 20 minutes.
- Take one ball and roll it about the size of a puri.
- Place stuffing in the middle of the rolled puri. Close the puri half-moon shape.
- Keep twisting the ghughra around the edges. Prepare the remaining ghughra with a damp cloth.
- Heat oil or ghee in a pan. Fry ghughras over low flame until light golden brown in colour.
- Let them cool down. Once it is cold, place them in an airtight container.
