The ingredients needed to make Spring Rolls:
- Get 4 garlic cloves
- Take 1 thumb of fresh ginger (or a teaspoon of dried)
- Get 1 chilli
- Prepare 1/2 red onion
- Prepare 1 courgette
- Take 1 carrot
- Prepare 1/2 red pepper
- Prepare 2-3 spring onions
- Take 5 leaves Chinese lettuce
- Get Half a pack of rice noodles (150g)
- Take 1 pack filo pastry
- Get Oil for frying
- Take 1 tbsp water
- Get 1 tbsp cornflour or arrowroot
Steps to make Spring Rolls:
- Dice the courgette, onions, carrot, pepper, and slice the spring onions.
- Heat the oil in a wok or pan. Stir fry the courgette, onions, carrot, pepper, spring onions, garlic, ginger, and chilli for 5-6 mins.
- Set aside and add the Chinese lettuce.
- Spoon the mixture (about 2 tablespoons) into the corner of a pastry sheet. Roll and tuck in the sides.
- Mix together the cornflour/arrowroot and water. Seal the roll like an envelope with this water/cornflour mixture.
- Fry each roll in hot oil for 3-4 mins.
