- Boil the potatoes gently with the skin on for about 10 minutes. Once cooled peel and cut them into 4cm cubes and set to one side.
- Heat oil and add cumin, coriander and fennel seeds once sizzling and fragrant, stir in the - boiled and cubed potatoes.
- Add the achaar masala and salt if required - Mix well so that it is well coated with the seasoning.
- Cook on a gentle heat for 2 or 3 minutes - you don't want them to turn into mash. - Add the amchoor powder and garnish with coriander leaves and bay leaves.
