- When the onion starts to look translucent add be rice and enough stock to cover. Keep heating until all water is absorbed.
- Gradually add more water until the rice is cooked.
- Once the rice is cooked stir in peas and nutritional yeast.
It is one of the most common ways of cooking rice in Italy. But Risotto does require a little effort so just make sure you plan for that. I happen to think that's part of the joy of Risotto, though—the organic process of cooking and stirring and cooking and stirring…plus it burns an extra twelve calories so you can have an extra…grain or two. When the risotto is almost ready, heat the sunflower oil in a small pan and quickly fry the sage leaves until crispy - it only takes a matter of seconds. Stir the butter into the risotto, and season well with salt and pepper.
