- Prepare 1/3 cup apple cider vinegar
- Make ready 1/3 cup sugar
- Prepare 1/2 teaspoon salt
- Prepare 2 tablespoons brown sugar
- Get 2 tablespoons Chinese black vinegar
- Prepare 1/2 teaspoon ground ginger powder
- Make ready If needed
- Prepare As needed water to thin the sauce
Steps to make Duck/Plum Sauce:
- Halve and Pitt the plums. Sprinkle with a little salt. Add to a pot.
- Add the rest of the sauce ingredients part I, to the pot. Simmer 20 minutes.
- Check the dried apricots for pitts and pit fragments. Slice them in half.
- Add to a pot with the ingredients of sauce part II. Simmer 20 minutes.
- Add to a blender both parts of the sauce. Blend till smooth. Thin with water if to thick. Chill in the refrigerator overnight.
- If possible make this the day before. Serve with Duck, Chicken, Turkey, Pork, and Lamb. I hope you enjoy!!!
