Steps to make Butter Chicken:
- Marinate the chicken with ginger garlic paste,chilli powder, garam masala, lemon juice,curd,salt and set it aside for at least 2 hours..I prefer to keep it overnight.
- Take pan..add water..add chopped tomatoes, Onion,ginger, garlic,dry spices,chillipowder,salt,cashews.Bring it to boil..then reduce the flame and let it cook on simmer for 20 minutes…Let it cool and then remove the bay leaf and black cardamon..puree it in a blender.
- Strain the pureed mixture and keep it aside.
- Take the same pan..add oil and fry the marinated chicken pieces till golden brown.Keep it aside.
- Add 2 tbps of butter in the pan..add finely sliced ginger.. saute it well..add the pureed mixture, nutmeg powder…and cook it on medium flame for ten minutes…add kasuri methi, chicken give it a mix and cook it for 5 minutes..you can add water to adjust the consistency of gravy as per your choice.1 tsp of honey to balance the tangyness from tomatoes.
- Add cream and cook it for another 5 minutes..
- Serve it with Roti or Jeera Rice.
