- Cut two of the oranges into quarters and remove any hard pips. Then blend in a food processor until smooth (skins and all). Add the eggs then blend again.
- In a mixing bowl, mix the almonds and baking powder together.
- Cut the third orange into thick slices and arrange them in the base of a deep springform cake tin lined with parchment paper. Grease the sides of the tin with oil or butter.
- Stir the egg and orange wet mix into the dry mix, mix well then pour into the cake tin. Bake at 180 C for 1 hr 30 mins. Cover halfway through to prevent the cake top over browning.
- Once cooked allow the cake to cook in the tin for an hour. Then carefully turn out onto a wire rack. Heat some apricot jam in a saucepan and then brush the glaze all over the cake. Done!
