Instructions to make Cherry & Coconut Cake:
  1. Set oven to 150°C prepare ingredients and grease tin with butter
  2. Mix butter and caster sugar together in a bowl until the mixture is light and fluffy. Add the egg yolks slowly, mix between each addition
  3. Fold in coconut, flour and glacé cherries
  4. Whisk egg whites to a soft peak. Using a large metal spoon beat in one spoonful of egg white the slowly fold in the rest. Pour mixture into greased tin and cook for 45 min
  5. Leave to cool
  6. Top by spreading the strawberry jam, placing the glacé cherries and sprinkle coconut on top
  7. Enjoy!!!!!!
